After eating meat, one must wait before consuming dairy. The waiting time varies by community: Sephardim and most Ashkenazim wait 6 hours (some 5.5 hours); German Jews wait 3 hours; Dutch Jews wait 1 hour. After dairy before meat, the wait is much shorter, one need only rinse the mouth, eat something hard like bread, and check that no dairy residue remains on the hands. Hard aged cheeses require a longer wait (6 hours in some opinions).
