    What is koshering utensils?

    A utensil mistakenly used for meat instead of dairy (or vice versa), or for non-kosher food, needs to be koshered

    Kashering (hechsher kelim) is the process of removing absorbed non-kosher or wrong-category flavors from utensils. The method depends on how the utensil was used: if food was cooked in water, the utensil is kashered by immersion in boiling water (hagala). If food was cooked directly on fire, the utensil needs direct fire exposure (libun). The principle is 'ke-volo kach polto', the way it absorbed, so it releases.
