A kosher land animal must have BOTH signs: (1) split hooves (parsa shesua): the hoof must be completely divided into two parts, and (2) chews its cud (ma'alat gerah), the animal regurgitates and re-chews its food. Examples: cows, sheep, goats, deer. The Torah specifically mentions four animals that have only one sign: the camel, rabbit, and hyrax chew cud but lack split hooves; the pig has split hooves but doesn't chew cud.
