Therefore, liver must be prepared exclusively by broiling (grilling over an open flame), which is the only method that effectively draws out its blood. The liver is sliced, salted lightly, placed on a grate over fire, and broiled until the surface changes color. It cannot be prepared by boiling, frying, or baking.
