Two challot (lechem mishneh — 'double bread') are placed on the Shabbat table, commemorating the double portion of manna that fell on Friday in the desert. Since no manna fell on Shabbat, God provided a double portion on Friday. The challot are covered with a cloth — some explain this recalls the layer of dew that covered the manna, while others say it is to spare the bread 'embarrassment' when we bless wine first.
