When do we say Borei Nefashot?
After eating anything whose initial blessing is Shehakol, Pri Ha'Adama, or Pri Ha'Etz (except Seven Species fruits)

In detail
Borei Nefashot ('Creator of many souls and their needs') is the general after-blessing for all foods that do not require Birkat HaMazon or Me'ein Shalosh. In practice, it follows foods blessed with Shehakol (meat, dairy, eggs, water), Pri Ha'Adama (vegetables, bananas), and non-Seven-Species tree fruits (apples, pears, oranges). It is a short, single-paragraph blessing expressing gratitude for everything God created to sustain life.
